Roasted Sweet Potatoes & Greens
Caramelised on the outside, soft in the middle, served on a bed of garlicky spinach. A weeknight hero.

Roast hot
Heat oven to 220°C. Toss sweet potato cubes with 2 tbsp oil and salt. Spread on a tray and roast 25–30 minutes until edges are deep brown.

Wilt the greens
While the potatoes roast, heat the remaining oil in a wide pan. Sweat the garlic for 30 seconds, then add the spinach and toss until just wilted.

Plate it up
Spoon the spinach onto plates, pile the roasted sweet potatoes on top, and finish with a generous squeeze of lime.
